These recipe are delicious with many different kinds of fish, including: •Kokanee•Landlocked Chinook King Salmon•Landlocked Coho Salmon▪Rainbow Trout▪Lightning Trout▪Brown Trout▪Lake Trout Mackinaw▪Striped BassBlackened Halibut Fillets2 to 4 Halibut FilletsSeasoning Mix1 Tbsp Lemon Pepper3 Tbsp Garlic Salt1 Tbsp Onion Powder1 Tbsp Oregano1 Tbsp Thyme1 Tbsp Cayenne Pepper2 1/2 Tsp PaprikaAdditional Ingredients2 Tbsp butterCooking Instructions•In a large shallow dish, combine the seasoning mix ingredients. •Rinse the halibut fillets in cold water.•Add each fillet to the seasoning dish and turn to fully coat the fillets.•In a large skillet, cook fillets in butter over medium heat until fish flakes easily with a fork. •Typically 3 to 4 minutes on each side should do the trick.Pan Seared Halibut Fillets2 to 4 Halibut FilletsSeasoning Mix•2 Tbsp Melted Butter•2 Tbsp Honey•2 Tbsp Lemon Juice•2 Tsp Soy Sauce•1/2 Tsp Pepper•1 Tsp Minced GarlicCooking Instructions•In a small mixing bowl, combine the seasoning mix ingredients and stir together until well mixed. •Rinse and then cut your halibut fillets into good portion sizes. •Brush both sides of each portion with the liquid seasoning mixture.•Heat pan on high until it is sizzling hot •Sear the halibut for 90 seconds on each side. •Reduce the heat to medium and cook each side for an additional 3 minutes. •The halibut is done, when it can be easily flaked with a fork.Pan Seared Halibut with Lemon Caper Sauce2 to 4 Halibut FilletsSeasoning Mix•4 Tbsp Stick Butter, Divided Into Chunks•1 Tbsp Olive Oil•½ Tsp Salt•¼ Tsp Black Pepper•4 Slices of Lemon •2 Tsp Minced Garlic•¼ Cup White Wine •2 Tbsp Lemon Juice•2 Tbsp Capers Drained•1 Tbsp Chopped ParsleyCooking Instructions•Rinse the halibut fillets in cold water, and cut into portion sizes.•Sprinkle a small amount of salt on the top of the halibut fillets.•Place two tablespoons of butter and the olive oil in a large skillet or and heat over medium heat.•Once the butter melts, swish it around the pan and add the fillets. •Sprinkle the remaining salt and the pepper on the fillets. •Cook for three to five minutes then gently flip the fillets over. •Add the lemon slices to the pan as the fish cooks and cook the fish for an additional three to five minutes. •The halibut is done, when it can be easily flaked with a fork.•Remove the fish fillets to a platter along with the cooked lemon slices.•Pour out all but two tablespoons of the juices in the pan.•Leave the heat on medium and add the garlic and cook one minute. •Add the wine and cook to evaporate. •Add the lemon juice, capers and parsley. •Cook for one minute then remove from heat and stir in the remaining 2 tablespoons of butter and stir to make the lemon caper sauce.•Put the fish back into the pan along with any liquid from the platter.•Bring heat back to medium and use a spoon to spoon the sauce over the top of the fish and cook for 30 seconds then remove to a platter and serve.•Serve each portion with a cooked lemon slice and spoon some of the pan sauce over each portion.BBQ Halibut Steaks2 to 4 Halibut SteaksSeasoning Mix•4 Tbsp Salted Butter •2 Tbsp Brown Sugar•2 Tsp Minced Garlic•1 Tbsp Lemon Juice•2 Tsp Soy Sauce•½ Tsp Black PepperCooking Instructions•Rinse the halibut steaks in cold water.•Preheat grill for medium high heat.•Place butter, brown sugar, garlic, lemon juice, soy sauce, and pepper in a small saucepan. •Warm over medium heat, stirring occasionally, until the sugar is completely dissolved.•Lightly oil bbq grill grate to prevent sticking.•Brush halibut steaks with brown sugar sauce, and place on grill. •Cook for 3 to 5 minutes per side, basting with sauce as needed.•The halibut is done, when it can be easily flaked with a fork.Baked Halibut Parmesan2 to 4 Halibut Fillets or SteaksSeasoning Mix•1/2 Cup of Flour•1 Large Egg•1 Cup Grated Parmesan Cheese•3 Tbsp Butter or Vegetable OilCooking Instructions•Put an oven rack in the center of the oven. •Preheat the oven to 450 degrees F. •Rinse then pat the halibut dry with a paper towel. •Spread the flour in a shallow dish. •Beat the egg with 2 tablespoons water in another bowl. •Put the Parmesan cheese in a third bowl. •Heat a medium oven safe skillet over medium high heat. •Add the butter or oil and heat until hot but not smoking. •Coat the halibut with flour, shaking off the excess.•Coat the halibut with the egg mixture, shaking off the excess. •Coat the halibut with the Parmesan cheese. • Place the fish in the pan and cook until golden brown on both sides, 1 to 2 minutes per side. •Transfer the skillet to the oven and cook until slightly crispy, 4 to 5 minutes.
