Beef Jerky Recipe Ingredients

5 Pounds Ground Beef or Game Meat 5 Teaspoons Morton Tender Quick - Or half to one Teaspoon Pink Curing Salt 2 ½ Teaspoons Mustard Seed 2 ½ Teaspoons Garlic Salt 2 ½ Teaspoons Coarse Ground Black Pepper 2 ½ Teaspoons Red Pepper Flakes 2 ½ Teaspoons Granulated Garlic Powder 2 ½ Teaspoons Granulated Onion Powder 2 ½ Teaspoons Crushed Fennel 2 ½ Teaspoons Crushed Anise 2½ Teaspoons Cayenne Pepper 2 Tablespoons Paprika 2 Teaspoon Clear Liquid Smoke 1 Teaspoon Smoked Hickory Salt Mix the ingredients together in a big bowl or dish, then make the beef sticks or jerky gun strips and get them ready to put on the smoker. You can use less meat, just adjust the rest of the ingredients accordingly. Mix well and refrigerate for 4-24 hours to help the meat bind together. Take the meat mixture out of the fridge and pack the mixture into the jerky gun making sure there are no air pockets. Shoot strips of jerky onto your smoker mesh grill racks and smoke it for 2 to 4 hours depending on your smoker. Check it every thirty minutes after the first two hours to ensure it doesn’t get too done. Can also be made in the oven, air fryer, or made into patties and cooked in a frying pan. Depending on how I am cooking it, sometimes I also add cheese and jalapenos. This makes the perfect amount of beef sticks or jerky strips that you can freeze most of it, and pull out enough for you and your family to eat over a two or three day period. I put the sticks that I keep ready to eat in the fridge, and my family munches on it for snacks. As your defrosted and ready to eat batch gets low, you just pull more out of the freezer.
