Honey Lemon Chicken Thighs Pellet Grill Recipe
3 Lemons ½ Cup of Olive Oil ½ Cup of Honey 2 Tablespoons Minced Garlic 2 Teaspoons Dried Parsley 1 Teaspoon Dried Basil 1 Teaspoon Salt 1 Tablespoon Coarse Ground Black Pepper 1 Teaspoon Ground Red Pepper 16 Chicken Thighs •Juice lemons and place in a large zip top bag. •Add the remaining spices and mix well. •Add the chicken thighs and move around in the bag to coat each piece with the marinade. •Seal the bag and let it marinate in the refrigerator to for anywhere from one hour to overnight. •Preheat the pellet grill or BBQ to 450 degrees. •Place the chicken on the grill and at about the nine minute mark, flip them over to grill the other side. •Should be done in another nine minutes or so. •Take chicken off when the internal temperature reaches 170 to 175 degrees, & skin is nice and crispy. •If you prefer to cook the chicken in the oven, cook at 425 degrees for about 25 minutes. •They are done when the internal temperature reaches 170 to 175 degrees.

Grilled Teriyaki Chicken Recipe
6 -12 Skinless Boneless Chicken Thighs or Breasts1 Cup Soy Sauce1 Cup Pineapple Juice½ Cup Water¼ Cup Honey1 Cup Granulated Sugar¼ Cup Brown Sugar2 Tablespoons Minced Garlic2 Tablespoons Ginger1 Tablespoon Coarse Ground Black Pepper1 Teaspoon Cinnamon1 Tablespoon Apple Cider Vinegar2 Tablespoons Sesame Oil1 Teaspoon Red Pepper FlakesMix all of the ingredients together, add the chicken, and marinate for 1 to 10 hours. Once ready to cook the teriyaki chicken, preheat the pellet grill to 450 degrees. Add chicken, and grill for four minutes per side. Take off once internal temperature of the chicken reaches the right temperature for the level of doneness that you prefer, between 165 and 175 degrees. Take off grill, and garnish with green onions and sesame seeds. The remaining marinade from above can be cooked in a sauce pan for sauce to pour over your chicken on the plate, or to dip with, by adding 2 tablespoons of cornstarch and ½ cup of water. Bring it to a boil and boil for three additional minutes.

1 Tablespoon Hoison Sauce¼ Cup Soy Sauce1 Tablespoon Sesame Oil2 Tablespoons Honey2 Cups Brown Sugar1 Teaspoon Five Spice Powder1 Tablespoon Thyme1 Tablespoon Coarse Ground Black Pepper½ Tablespoon Ginger2 Tablespoon Garlic1 Tablespoon Red Food Coloring (optional)1/8 Teaspoon Liquid Smoke2 Tablespoons Creamy Peanut Butter1 Tablespoon Ground Cayenne Red Pepper12 Skinless Boneless Chicken Thighs or Legs•Mix all the ingredients together and place in large bowl with chicken. •Marinate for two hours, or overnight is even better. •Preheat pellet grill to 275 Degrees.•Place chicken on pellet grill and save remaining marinade. •Cook on Pellet Grill for 1 to 1.5 hours until chicken internal temperature 180 degrees.•Remove chicken from the grill and let rest for ten minutes before serving.•Heat remaining marinade to a boil for safety, and then use it as a sauce or a dip. •You can also pour it over the chicken, or over rice for great flavor.

Grilled Chicken Drumsticks Recipe
14 Skin On Chicken Drumsticks1/3 Cup Olive Oil½ Tablespoon Salt½ Tablespoon Coarse Ground Black Pepper1 Teaspoon Rosemary1 Teaspoon Ground Red Pepper1 Teaspoon Oregano½ Tablespoon Garlic Powder1 Tablespoon Italian Bread Crumbs•Mix together all of the seasonings. •Put the chicken in a large bowl•Pour the olive oil over the chicken and roll the chicken around in it to fully coat•Add the seasonings and roll the chicken around to fully coat•Preheat pellet grill to 275 degrees•Put the chicken on the grill and cook for about an hour until the internal temperature of the chicken reaches 180 to 185 degrees•Let chicken rest for five minutes before serving
Chinese Foil Wrapped Chicken Recipe
2.5 Pounds of Boneless Skinless Chicken Thighs4 Large Diced Green Onions½ Cup Soy Sauce¼ Cup Brown Sugar2 Tablespoons Sesame Oil2 Tablespoons Rice Wine1 Tablespoon Minced Clove½ Tablespoon Ginger½ Teaspoon Chinese 5 Spice½ Teaspoon Coarse Ground Black Pepper1 Teaspoon Red Food Coloring1 Tablespoon Creamy Peanut ButterFoil for making foil wrapts•Cut chicken into two inch pieces and set aside.•Trim green onions into 2 inch sections and set aside.•Combine remaining ingredients in a small sauce pan.•Bring to a rolling boil over medium heat and boil for five minutes.•Transfer sauce to a large bowl and let cool to room temperature.•Once cool, add chicken and green onions, and mix to coat. •Cover and place in fridge to marinate for two to four hours. •Cut 16 six inch squares of aluminum foil. •Place foil shiny side down on your counter. •Remove the chicken from the marinade, and set remaining marinade aside. •Place a piece of chicken, a little marinade, and a piece of green onion on a foiil square.•Fold into a triangle over the chicken, then fold the edges over a little bit over itself to form a seal. •You can either cook the chicken now, or set it in the fridge for a couple of hours until ready to cook. •Preheat grill to 400 degrees. •Place the chicken on the grill, regularly turning, until fully cooked. •Will take four to eight minutes to cook. •Check for doneness by opening one up and giving it a try.
