Steps to Make Maple Cranberry Sausage
1.You can either start with store bought or processed ground meats, or by cutting your meats into small pieces and running them through your meat grinder to make your own ground meats. 2.Add the seasonings to the mixed ground meat, and mix meat thoroughly. Make a single small patty with your ground meat, and cook it in a frying pan, so you can taste the meat to see if you want to add additional seasonings to taste or if it is perfect already.3.Once you are good with the flavor, you can begin stuffing the meat into the casings, or packaging for bulk sausage that you can make into breakfast sausage patties or hand rolled and shaped sausage links.4.For the breakfast sausage in bulk, I separate out the meat into portion sizes that will be enough for each breakfast for my family, and vacuum seal each package and label it with the date and what it is, and put it in the freezer. For the sausage links, I stuff the meat into casings. Casings can be purchased at your butcher shop, outdoor retailer, or online. Most of the casings you will find are packed in salt and may need to be soaked and rinsed before you can use them. You can also choose to roll the meat into hand made links as well.5.I like to stuff small breakfast style link casings, and large casings to make bratwurst to have on the BBQ as a meal or to supplement anything else I cook on the BBQ. Once you have filled your casings you will want to link them by pinching the sausage and then roll each link in the opposite direction as the last one. This will give you nice, tight links. 6.Next you can cut the links and set them somewhere nice and cold so that they can dry slightly and tighten up around the meat. Lastly, you can put the links in a vacuum sealer bag and seal them. Then label them with the date and what they are, and put them in the freezer for future use. If packaged correctly, they will last in the freezer for a year or more, and will be fresh and delicious for you when you are ready to cook them.
