Seafood, with shrimp being one of my favorite, is a great red meat alternative. Healthy, and refreshing. Served as the main dish, or as a delicious complimentary side, you just can’t go wrong with some good quality shrimp recipes. Your family and friends will love these simple and delicious recipes.
1 Pound of Large Shrimp (Peeled and Deveined)1 Cup of Water1 Cup of Sugar1 Cup of Walnuts2 Large Eggs (Beaten)1 Cup of Cornstarch1/4 Cup of Mayonnaise3 Tablespoons of Honey3 Tablespoons of Heavy Cream2 Green Onions (Thinly Sliced)Salt and Ground Black Pepper to TasteVegetable Oil for Frying
Instructions
Add water, and sugar to a small saucepan over medium heat, and heat to a light boil. Add walnuts and let boil for two minutes. Using a spoon with holes in it to allow the water to drain, scoop out the walnuts and let them dry on a baking sheet. Rinse the shrimp, and pat them dry with paper towels. Sprinkle lightly with salt and pepper to season. Place mixed eggs in a shallow bowl, and cornstarch in a second shallow bowl. Dip the shrimp in the eggs, and then in the cornstarch to coat them well. Put oil in a frying pan until it is about an inch deep to be able to fully cover the shrimp. Cook the shrimp by frying them in small enough batches so they won’t touch during cooking. Cook each batch for about four minutes, and take them out and put them onto a paper towel. Mix the mayonnaise, honey, and heavy cream into another separate bowl, and whisk together to mix well. Toss the shrimp in the sauce to coat well. Plate them, and sprinkle the candied walnuts over the top. Add the sliced green onions for some color and a pop in flavor. Serve with rice.
Shrimp Fra Diavolo With Scallops
Ingredients
3 Tablespoons Butter1.5 Pounds Large Shrimp (Cleaned and Deveined)1 Pound Scallops1 Teaspoon Crushed Red Pepper Flakes1 Teaspoon Olive Oil1 Cup Chopped Sweet Yellow Onion2 Tablespoons Minced Garlic3/4 Teaspoon Salt3/4 Teaspoon Coarse Ground Black Pepper3/8 Cups of Red Wine2 14.5 Ounce Cans of Diced Tomatoes1 6 Ounce Can of Tomato Paste1 Teaspoon Dried Oregano4 Tablespoons Chopped Fresh Parsley1 Teaspoon Thyme2 Tablespoons of Sugar1 Teaspoon of Basil1 Tablespoon of Lemon Juice
Ingredients for the Linguine
1 Pound of Linguini2 Tablespoons of Salt
Instructions
Rinse scallops and pat dry with paper towel. Heat pan over medium heat. Add 1 tablespoon of butter and add scallops in a single layer. Flip once browned (about two minutes) and cook until nicely browned on the other side. Transfer to a bowl and stir in two tablespoons of parsley, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper, and set aside. Rinse shrimp, and pat dry with a paper towel. Sprinkle with 1/2 teaspoon of salt, and 1/2 teaspoon of black pepper. Heat pan on medium heat. Add 2 tablespoons of butter, and olive oil. Add the onion and saute for four minutes until they start to soften and turn opaque. Add garlic, and red pepper, and saute for another minute. Add the shrimp in a single layer and saute for 1.5 minutes. Flip the shrimp and saute for 1.5 more minutes. Add the red wine and simmer for three minutes. Add tomato paste, dried oregano, thyme, sugar, basil, rest of the parsley, diced tomatoes, and continue to simmer for four more minutes. Fill a large pot with enough water to boil the linguini. Add two tablespoons of salt, and the linguini. Boil the linguini according to the package instructions. Drain the linguini, and add it to the sauce pot and mix together well. Add scallops and gently mix together and allow it so simmer for a minute to soak in the sauces. Transfer to large shallow serving bowl and serve hot.
Garlic, Pineapple, & Honey Grilled Shrimp Recipe
Ingredients
1/4 Cup of Olive Oil2 Tablespoons of Soy Sauce4 Tablespoons of Honey3 Tablespoons of Garlic1 Tablespoon of Parsley1 Teaspoon of Paprika1 Teaspoon of Lime Zest1/2 Teaspoon of Crushed Red Pepper1 Teaspoon of Coarse Ground Black Pepper2 Teaspoons of Hot Sauce1 Cup of Pineapple Juice2 Tablespoons of Brown Sugar1 Teaspoon of Ginger1 Can of Cubed Pineapple2 Pounds of Large ShrimpJuice of 1 Lime
Instructions
Mix the ingredients together, except for the cubed pineapple. Add the shrimp. Marinate in the refrigerator for one hour, stirring it up every 15 minutes. As you heat grill up to 450 degrees, start placing the shrimp onto skewers by adding one shrimp, then one cube of pineapple, then one shrimp, and one cube of pineapple, and repeat until each skewer is full and you have used up all of the shrimp and pineapple. Place the skewers on the grill, and cook for three minutes per side, or until done to your likeness.
